Shahi Paneer

Shahi paneer recipe step by step elaborated.
It is a rich mughlai dish which is prepared mainly by paneer (cottage cheese) which is cooked in a rich gravy.
Main ingredients are paneer, onion, tomatoes, cashew nuts you can also add almonds, cream makes it smooth.

Ingredients

200 gram of paneer (cottage cheese)
2 medium sized onions
3-4 medium sized tomatoes
20 grams cashew nuts
2-3 cloves (laung)
2 green cardamom
1-2 red chilli whole
2-3 cloves of garlic
Butter/ ghee/ oil as required
Salt according to taste
½ teaspoon red chilli powder/deggi mirch
1 teaspoon coriander powder
¼ teaspoon turmeric powder
½ teaspoon cumin powder
⅓ teaspoon kasoori methi
½ cup fresh cream
½ teaspoon honey

Method for preparing Shahi Paneer


  • Heat butter/ghee/ oil in a wok on medium flame when it comes to heat add cloves, green cardamom, red chili.
  • When it crackle add soaked cashew nuts and add crushed garlic to it.
  • Then add sliced onions and cook till light brown colour.
  • Add chopped tomatoes to it, mix well and cover it with lid for 10 minutes then you will see the tomatoes will be pulpy. Cool it and blend it into a smooth puree.
  • Again heat a wok on medium flame add one tea spoon of ghee/butter/oil to it then add this cashews-onion-tomato puree to it and and cook till sides of gravy leaves fat/oil/butter.
  • Then add salt (according to your taste), deggi mirch powder(Instead of this you can add red chill powder) crushed kasoori methi leaves, cumin powder (jeera powder), coriander powder and turmeric powder. Mix this well.
  • Cook for 1 minutes on low flame. Now add cream & honey, and mix well.
  • Add cubed cottage cheese (paneer).
  • Cook for 2-3 minutes. And your shahi paneer is ready to be served.
  • Garnish with coriander leaves.
   It taste best with roti, Naan or phulka.
