Dosa | Sada Dosa

Recipe to a soft and crispy South Indian dosa.
Dosa is a popular south Indian crepe made out of fermented rice and dal batter.
It is also known as dosai in some parts of India. There are many variations in dosa. It is a healthy breakfast option as dals are a good source of protein and rice are good source of carbohydrates.

Ingredients

1 cup rice or idli rice
½ cup split urad dal
1 tablespoon channa dal
1 tablespoon fenugreek seeds (methi dana)
2 tablespoon poha or flattened rice (optional)
1½ tablespoon salt
Oil

Method

  • In a bowl wash, rinse and soak the urad dal, channa dal and fenugreek seeds together.
  • In another bowl add rice and poha (flattened rice) together then wash and rinse both and soak them as well.
  • Now we have 2 bowls one with soaked rice and poha and another with soaked dals and fenugreek seeds.
  • Soak them for 3-4 hours now drain the water, grind both of them separately first grind rice and then dal if required you can add little water while grinding  (ensure that you have grinded completely and smoothly). After we have done with grinding now mix both - grinded dal and rice batter.
  • Ferment the mixed batter by placing batter in a warm place for 6-8 hours (fermentation time depends on climate warm climate ferment the batter quickly but in cold climate it will take up to 12-18 hours).
  • After batter is fully fermented now add salt and just mix it and please ensure that you don't make the air of fermented batter out.
  • Now add enough water to the fermented batter and make the consistency of this batter to pouring consistency. Which means consistency should neither be very thin and nor be very thick.
  • Now we'll start making dosa for this we will grease the tawa with oil. If you are using iron tawa then grease it with the help of onion slice and oil this will make the tawa non-stick.
  • Now on medium flame pour the laddle full batter in the center of tawa and spread evenly in circular shape.
  • Now pour 1 tablespoon of oil.
  • Wait till the edges of the dosa start rising now flip it (if you want).
  • Cook till golden colour. Make all the dosas out the batter in the same way.
  • Serve with chutney or sambhar.
